Classic Green Monster Smoothie

The Saanich Green Market is coming to the Jewish Community Centre and is happening on June 12, 2022! The following recipe is easy, quick and oh so healthy! It uses fresh ingredients like spinach or kale that you will be able to purchase at close to wholesale prices, at our new community market.

From the Cookbook “Oh She Glows!"
by Angela Liddon

"If you are a newbie, feel free to start off with baby spinach since its taste is undetectable, but I encourage you to experiment with kale, romaine lettuce, or other leafy greens as well. For those of you who aren’t fans of drinking something green, simply add 1/2 cup (125 mL) frozen or fresh blueberries to this smoothie to give it a beautiful purple hue."

Makes 1 (1 1/2 to 2 cup/375 to 500 mL) smoothie

Prep time: 5 minutes

Gluten free, oil free, raw/no-bake, sugar-free, soy-free, grain-free (nut-free option)

  1. In a high-speed blender, combine all of the ingredients and blend until smooth.

  2. Serve immediately and enjoy a burst of energy any time of the day!

Ingredients:

1 cup ( 250 mL) almond milk or other non dairy-milk

1 cup (250 mL) destemmed kale leaves or baby spinach

1 ripe banana, peeled and frozen

2-3 ice cubes

1 tablespoon (15 mL) almond butter or peanut butter

1 tablespoon (15 mL) pure chia seeds or ground flaxseed

1/4 teaspoon (1 mL) pure vanilla extract

Pinch of ground cinnamon

Protein powder (optional)

Tips: It’s easy to make a double batch and refrigerate the leftovers in a jar for the next day. Or, prepare the smoothie at night and store it in the refrigerator for the next morning. To make this nut-free, use coconut milk and sunflower seed butter instead of almond milk and nut butter.
