Ministra Soup (Traditional Maltese recipe)

Soup is a healthy and inexpensive way to stretch your food budget. You can freeze portions for future meals and savour that fall harvest goodness during the winter months. This delicious soup sold out at the December 4th market.
Ingredients
3 white potatoes
3 celery stalks
1 turnip peeled
1 can white beans
1 small cauliflower (florets only)
1 large white onion
½ lb. carrots
1 ½ lb. banana squash
4 beef bouillon cubes
3 tablespoons olive oil
7 cherry tomatoes or 1 medium tomato
Directions
Dice potatoes and turnip, slice/dice onion, slice carrots, remove florets from cauliflower, cut squash into thumb sized or larger pieces.
On stockpot, sauté onion in olive oil, add vegetables and continue to sauté. Add water to one inch below top of the vegetables, add bouillon cubes, and bring to boil. Reduce heat and simmer with lid on 1-2 hours. Add beans and simmer 15 minutes.
